The template is an html file in Server/Resources/Notifications/PasswordReset.html. Change however you'd like.

Youu could literally use notepad

And the image? Can I edit the image using notepad?

You can edit the image with an image editing program like photoshop. Then use html via the notepad to "Refer" to the image and render it in the html page. Aka: there should be a link in the html file that points to the image, replace this link with a link to your own image.

Server config file, make sure players can have more than 1 character, it's default to 1 to my knowledge.
