How to add extra inventory slots?

As per title, what is the simplest way to go about it, figured I would post it for posterity. Thanks!

Open your server folder, then resources folder, and then open config.json, search for "MaxInventory", and adjust the number to what you want the inventory size to be.

That won't change the actual inventory slot which the engine allow to do directly from the server configuration.
