Do you think performance would take a hit if I made full maps of the ground (grass and pathways) out of tilesets? or would it just be better just to make it the regular way?

Do it for the maps you need a level of details the Map Editor itself can't give you, like cities and important parts of a dungeon. Then use regular mapping for fields or sorts of things you don't need a high level detailing.

 

That's what I'd do.
