Problems with saving data

I open my server and i can play with my friends and they can play and level up and get items. Sometimes it saves when i close the server and start it back up but sometimes it just rollbacks. How could i stop my server safely without any rollbacks? These rollbacks happens often pretty much everytime i restart the server. I do not know why it saves the data sometimes and sometimes not. Help :C

How are you closing the server? With the exit command or just pressing the X button?

I figured it out closing the server by X or exit doesn't make a difference but if a player is still in the client and playing he/she will get reseted. But thanks anyway
